This recipe is PERFECTION. It has become my go-to pancake recipe and I have made it probably 5+ times so far.
The first few times I made the recipe, I followed it as is and it was perfect. I did make some changes the next few times, just to see if they would work, and they did! My changes will be marked in parenthesis.
Chocolate Chip Oatmeal Cookies Pancakes
Makes 3 large pancakes
I have used banana, 1/2 cup applesauce, and also frozen bananas work if heated
I have tried both flax egg and regular egg
Almond butter and peanut butter are both great
Coconut oil and avocado oil both worked in place of canola oil
For the flour, Namaste gluten free worked really well

I now omit the almond milk, since I like thicker pancakes
It is reaaaally important to melt whatever nut butter you use! Otherwise you will get almond butter blobs, not that that’s really a bad thing
If you use banana, expect a banana-y flavor. If you don’t like that, applesauce was flavorless.
I would definitely recommend this recipe! They are really filling with the oats in them, and really taste like a pancake cookie
