Carrot cake is the best, but only if it has cream cheese frosting. With regular vanilla frosting it just isn’t the same. Carrot cake protein bars? Yes please.
I made the silly mistake of not buying mashed carrot baby food and actually mashing the carrots myself. I also made another mistake of not steaming them in the microwave and took about 20 minutes to boil them. Won’t be doing this again next time. Do yourself a favor and buy them mashed.
Healthy No Bake Carrot Cake Protein Bars
1/2 this recipe made 3 bars for me, so expect about 6
Substitutions made & products used:
For the 1/2 cup coconut flour, I used more oat flour
Myofusion Probiotic Whey
I omitted the 2 T granulated sweetener
For the 1 tsp mixed spice, I used equal amounts cloves and nutmeg with a little ginger
For the 1/4 cup almond butter, I used Kirkland brand
I used maple syrup instead of brown rice syrup

(YES there’s even frosting on them!!)
I again used the Myofusion Probiotic and Vanilla Silk Almond Milk
WOW. These are little bars of heaven. The taste is perfect and they’re chewy like a granola bar. They’re super hearty and filling which is great for a mid-day snack.
The frosting is amazingly delicious. I’ll be using that for other recipes too, it’s way too good.
I will definitely be making these again!
