Healthy No Bake Giant Paleo Cookie For One

This is the second recipe from The Big Man’s World that I tried and loved!

Warning though: he really means GIANT. Like it would be the size of my face if I kept it as one cookie. I decided to split it into 2 slightly less massive but still somewhat giant cookies instead.


Giant Paleo Cookie

Makes one face-sized cookie or 2 less monstrous sized cookies

Substitutions made and products I used:

For the 1 Tbsp almond flour or coconut flour, I used coconut

I omitted the 2 Tbsp granulated sweetener


For the 1 scoop protein powder, I used MyoFusion Probiotic Vanilla

For the 2 Tbsp nut butter, I used Nut Butter Nation Brown Sugar Cinnamon

For the 1-2 Tbsp mix-ins, I used Enjoy Life chocolate chunks (of course)

For the “About 1/4 cup Unsweetened Vanilla Almond Milk”, I used only 4 Tbsp

This recipe was super easy. You basically mix the dry. Add the maple syrup and nut butter, lick extra peanut butter off spoon. Mix. Mix some more with your hands. Lick batter off hands. Eat cookies.



I have to say, I really hate coconut flour. I also hate almond flour. I’m really not a fan of grainless paleo flours at all. Coconut flour has an artificial sweet taste to me and I’m not sure why.

So, I found these cookies delicious, but next time I won’t be using coconut flour. I’ve made The Big Man’s World carrot cake protein bars before, and they used oat flour. I think I’ll try that next time.

I really did love this recipe though. It’s delicious, healthy, easy, and has a great texture. I definitely want to try more of his recipes!
