Hottokēki (Japanese Hot Cake)

Recipe from Tara’s Multicultural Table

I like to think of myself as a pancake enthusiast. They are my favorite breakfast food, and they’re definitely what I miss most since I started to eat clean/Paleo. I’m also all about the toppings when it comes to pancakes, but it’s still important to have a perfect fluffy base.

Hottokēki (Japanese Hot Cake)

Made 8 pancakes

Substitutions I made:

Instead of regular milk, I used Silk Unsweetened Vanilla Almond Milk

I used Sprouted Whole Wheat Flour instead of all-purpose

I used coconut sugar, and also used a little less than it called for

Result:

I topped my pancakes with a mixture of chia seeds (soaked and gelled), cocoa powder, and a little maple syrup to make a chocolate sauce. I also added a crumbled Paleo brownie, Enjoy Life Chocolate Chunks, and cocoa nibs.

Oh my yum! They were super thick and fluffy, but still cooked through the middle which is awesome. I’ll definitely be making these again, they’re gonna be my new go-to pancake recipe 😀

Update:

I made this with 2 Tbsp cocoa powder + 1 Tbsp beet powder + added 1/4 cup milk to make red velvet, and they were amazing of course

I also topped them with protein powder cream cheese frosting 🙂
