The recipe for this gem is adapted from The Big Man’s World. No surprise there! All of his recipes so far have been a huge hit.
As I have stated multiple times…probably too many… I have a weakness for all things funfetti/ birthday cake/ cake batter/ full of sprinkles and who isn’t a fan of muffins!? This recipe was basically a dream come true
Products Used/ Substitutions:
-I halved the recipe, which I usually do when trying a new recipe-
For the oat flour, I used a My Oatmeal blend of marshmallow flavor, graham cracker flavor, and coconut flavor. I know. I’m a genius.
I used about 2 Tbsp less oat flour and added 1/2 a scoop of Trutein Birthday Cake because I could just feel the recipe asking me to add some. Yes, muffins, I will do that for you.
I added a splash of butter extract as well as the vanilla, to give it a real cake flavor
I used half almond butter and half Honey Vanilla Nut Butter Nation PB
I used only 2 Tbsp of coconut sugar instead of 1/4 cup
Lastly, I used unsweetened vanilla Silk almond milk
These muffins had a great texture but very little funfetti taste. Even with the birthday cake protein powder, vanilla extract, butter extract, and flavored oatmeal I found them a little bland. They were super moist, though, and I didn’t find the lack of flavor upsetting which is surprising.
Tip: overfill your muffin tins! They did not expand at all so I suggest making them bigger than you’re thinking (and yes, I’m pretty sure my baking powder is fine)
As you can see, I made a protein “frosting” to go with my muffin, to turn it into a cupcake. Eating a muffin at night didn’t seem right, but of course I had to try one. So I mixed some protein powder and water until it was a frosting consistency.
Overall, I was really happy with this recipe. They were super easy, very few dirty dishes, and were very good. Next time, I will add more birthday cake protein powder, vanilla extract, and butter extract for even more yummy flavor 🙂
