Brownie Batter Bean Balls

Baking with beans is extremely intimidating. Nothing about bean brownies sounded appealing to me, but I decided to go for it a while ago and was totally surprised by the outcome (I’ll share that recipe soon!). After making the bean brownies, and tasting the amazing bean creations of Pure Genius Provisions (I did a review of them as well), I started thinking about other possibilities for bean desserts. And thus the bean ball was born.

I would imagine there are other recipes for bean balls on the internet, but I didn’t see any black bean ball recipes anywhere. So, this one is my own.

Brownie Batter Black Bean Balls

Makes about 12 golf-ball sized balls

1 can black beans, rinsed

1/2 cup pb

1/4 cup chia pudding/ chia gel/ soaked chia seeds/ whatever you wanna call it

4 Tbsp honey

3 tsp vanilla

1/4 cup cocoa powder

 

Instructions: Blend beans in food processor or blender. Add in all other ingredients and blend until smooth 😛 Store in a tupperware in the refrigerator

Possible substitutions:

Today’s post is a little backwards since this is my own recipe. Of course I didn’t substitute anything in my own recipe, but here are some ideas of substitutions or additions if you decide to recreate it:

Chick peas instead of black beans

Almond butter, cashew butter, coconut butter, or a mix of multiple

You could omit the soaked chia seeds, but then its a solid block of pure beans and nut butter, which is also heavy in fat and calories. You could probably add mashed banana, applesauce, sweet potato, or something else.

Maple syrup or agave instead of honey

Almond extract or coconut extract

You could definitely add protein powder, or any mix-in like chocolate chips, seeds, coconut, etc.
