(Protein) Cookie Dough Stuffed Chocolate French Toast

Confession: I’m not entirely sure that I like French toast. It’s a strange situation. I crave French toast sometimes, and then I eat it and decide I don’t like it. And then I find myself in the mood for it again. And it’s this strange cycle of unknown feelings about French toast.

The main reason I don’t like it is the consistency. It’s weirdly soggy and squishy and sometimes doesn’t even require chewing which freaks me out. I might be the only one, but I also find French toast sometimes tastes metallic. I woke up craving it the other day, but decided to try something different. Rather than using the typical egg/cinnamon mixture, I wanted to see if chocolate would mask the metallic taste. I’m glad I had this epiphany because it was AMAZING

For The French Toast:

1/4 cup almond milk (or any milk), I usedย So Delicious Coconut Almond Milk

1/2 scoop chocolate protein powder (or any flavor), I usedย Optimum Nutrition

1 tsp cocoa powder

1 egg

  1. Mix ingredients in a shallow dish, and dip slices of bread. Cook on stovetop as you normally would.

For The Protein Cookie Dough:

This recipes makes much more than you need, so keep it in the fridge to top pancakes, waffles, ice cream, or eat by the spoonful. I won’t judge.

1 can chickpeas

1 scoop protein powder, I usedย Trutein Birthday Cake

3 Tbsp honey (can substitute any sweetener)

2 Tbsp coconut sugar (or any sugar)

3 Tbsp almond milk (or any milk)

1 tsp vanilla

Chocolate chips

  1. Blend all ingredients except chocolate chips in food processor or blender. Stir in chocolate chips.

For The Protein Chocolate Sauce:

1 scoop chocolate whey

1 tsp cocoa powder

Water

  1. Mix and add water until you reach the desired consistency.

  1. Girl, you’re aware this look unreal, right?! In the very best way. Confession: I’ve never had French Toast before – it’s not really a thing over here – but wouldn’t say no one like yours.
