I am super picky about my brownies. They have to be the perfect amount of fudgy, and not fudgy as in fudge-y. Some brownies are literally like blocks of fudge and that is just wrong. The fudginess of brownies is a whole different species of fudge.
So many healthy brownie recipes I’ve tried are either cakey or the wrong type of fudgy (which would be fudge-y because it is similar to fudge). This is the first recipe I’ve tried that is ON POINT. These are probably even better than some of the non-healthy brownies I’ve tried. Yet again, Arman has created a winner.
Substitutions/ Products Used:
I reduced the sugar from 3/4 cup to 1/2 cup, and used both coconut and brown sugar ( only because I ran out of coconut sugar )
I omitted the chocolate chips because I like to put chocolate chips on top of my ice cream, which is on top of a brownie of course 🙂
I can not say enough amazing things about these brownies!! The texture and taste is so perfect and they freeze very well. Just be careful when microwaving them because they get mushy, so you’ll have to eat it with a fork.
What I would keep the same: I’m glad I reduced the sugar, they were perfect without it
What I would change for next time: I would probably try pureeing the zucchini rather than shredding it. It didn’t bother me at all, but you could see some weird stringy pieces of zucchini in there.
