I know the color of these pancakes is a little intimidating, but trust me they taste nothing like they look! The spinach just gives them a hint of sweetness and a pretty funky color.
This recipe is dairy free, gluten free, and high protein, but has no protein powder!
My topping choices would have made this the perfect Saint Patrick’s Day breakfast!
Spinach Pancake Recipe
1 cup spinach, pureed
1/2 cup chickpea flour
1/4 cup oat flour
1/4 cup almond flour
1/2 tsp cinnamon
1 tsp vanilla
1 tsp baking powder
1 tsp olive oil
1/2 cup coconut milk
- Blend the spinach, and then stir in the other ingredients.
- Pour onto a pre-heated and greased pan, and enjoy! 🙂
