Matcha Skillet Cookie (V, DF)

Skillet cookies are probably my favorite thing ever. I LOVE gooey cookies, and there’s no better way to eat one than out of a lil skillet. I partnered with Motion Matcha to make this bomb matcha skillet cookie for one (because who likes to share??) They sent me some of their new products to sample, and as you already know, I love them!! I’ve made recipes using their products before, and I’m never disappointed.

Matcha Skillet Cookie

Serves 1

2 Tbsp almond butter

1 Tbsp coconut sugar

1 Tbsp maple syrup

Splash vanilla

1/8 tsp baking soda

¼ cup whole wheat flour

1 Tbsp Motion Matcha

2 Tbsp chocolate chips

3 Tbsp coconut milk

 

  1. Preheat oven to 350 and grease a small pan or ramekin. (Tip: if you don’t have an oven safe pan, just wrap the handle in tin foil so there is no exposed rubber, and it is now oven safe)
  2. Mix all ingredients until combined, and then bake for 10 minutes. Allow to cool, and enjoy!

 

It’s egg free, so don’t be afraid to under-bake it if you like gooey cookies! And if you don’t like gooey cookies, you’re wrong. Just kidding. Kind of.
